How do I make icing for cake or cupcakes?
I would like to use heavy whipping cream but I don’t know how to do it. I’m open to anything that has NO hydrogenated oils, equal, aspartame or splenda in it. I want it to be completely natural. I buy bananas a lot and they have a tendency to go bad often on me so I’m always making banana bread or cake as it come out sometimes. Can anyone help me on how to or what kind of icing I could make for my creations? Thank You, your help is greatly appreciated.

I think you can just whip up the cream with powdered sugar and vanilla (or some other flavor) extract. I don’t know if that’s natural enough for you, just a thought.
I make banana cake all the time and the frosting that complements it the best is caramel. This recipe is absolutely incredible! One of my all time favorites. It uses whole milk instead of whipping cream. I don’t think it’s a good idea to substitute whipping cream for the milk. (Also don’t substitute low fat or fat free milk).
Quick Caramel Frosting
From Cake Mix Doctor by Anne Byrn
8 tablespoons (1 stick) butter
½ cup packed light brown sugar
½ cup packed dark brown sugar
¼ cup whole milk
2 cups confectioners’ sugar, sifted
1 teaspoon pure vanilla extract
Place the butter and brown sugars in a medium-size heavy saucepan over medium heat. Stir and cook until the mixture comes to a boil, about 2 minutes. Add the milk, stir, and bring the mixture back to a boil, then remove the pan from the heat. Add the confectioners’ sugar and vanilla. Beat with a wooden spoon until the frosting is smooth.
Use immediately (while still warm) to frost the cake of your choice or the frosting will harden. If it does harden while you are frosting the cake, simply place the pan back over low heat and stir until the frosting softens up. Makes 3 cups, enough to frost a 2- or 3-layer cake.
Happy cooking!
