How long can I let a wedding cake sit before decorating?

Making a wedding cake, putting butter cream icing on it, then fondit over it. When should I put the icing and fondit on if the wedding is Saturday? Thanks for your help!

  1. You can let it set for up to a week in your fridge… BUT you need to wrap each layer in suran wrap and then put it in a zip lock bag. The butter cream frosting will melt if you et it sit on the cake to long. Having the cake chilled makes the butter cream easier to spred, and it will give you more time before it starts to heat up. GOOD LUCK!

  2. If you need to bake the cake more than three days in advance, wrap the layers well with plastic wrap, cover with freezer paper or foil, and freeze. Freezing cake makes it more moist and tightens the crumb. Putting a cake in the fridge makes it dry out.

    This is my timetable for wedding cakes;

    Wednesday: Make fondant.
    Thursday: Bake and level cakes, wrap in plastic wrap and store on countertop.
    Friday: Fill cakes, let sit at least three hours, then frost with buttercream. Put them in the fridge to crust, and leave them in for at least an hour. Cover with fondant, then decorate.

    If you are a beginner and don’t work too fast yet, then you could bake ahead of time and freeze the layers so you don’t feel too rushed. Make sure they’re totally thawed before you put frosting on. You can also put the buttercream on ahead of time.
