Is it possible to have a successful bakery that offers just cookies and non-specialty cakes?

I’d like to stay away from wedding cakes and other customized cakes, but I wasn’t sure if it was possible to actually still make money that way. Or would this be something that’s better as an online store?

    Tom’s cookies (cold section in better grocery stores)
