I bought a cookie cutter that looks like a 3 tiered wedding cake. need a good cut out dough recipe and royal icing that uses merang powder. any suggestions on decorating too .

Merang powder? Don’t waste your money. Thickness and consistency of icing is determined strictly by butter to icing sugar ratio. Use a basic sugar cookie recipe. Use flower confections for decorating.

It’s really important for the taste and texture to use real butter instead of margarine.
I usually put rolled fondant on my cookies. It’s easier and faster than royal icing. It would look especially good on wedding cake cookies. All that you have to do is roll the fondant about 1/8″ thick, cut the shapes with the same cookie cutter and then bake the cookies. Right after you take the cookies out of the oven, lay the fondant shapes on top of the hot cookies. The heat will melt the fondant just enough to adhere it to the cookie. You can emboss designs into the fondant while it’s still soft. You can also pipe royal icing details onto the cookies. That would look especially nice on your cookies…use a very small star to add a royal icing shell border to the tiers, or a round to add a bead border or drop strings. You could also color some fondant and then cut thin strips of it to look like ribbon borders on the tiers. A herb mincer is the perfect tool to cut thin, even strips of fondant.
Best Sugar Cookie Cutouts
1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
3 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 cup heavy whipping cream
1/2 cup colored sugar for decoration
DIRECTIONS
1.In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Sift together the flour and baking powder, stir into the creamed mixture alternately with the heavy cream. Cover dough, and chill for 2 to 3 hours, until firm.
2.Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
3.On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 1 inch apart on the prepared cookie sheets. Sprinkle with colored sugar if desired.
4.Bake for 12 to 14 minutes in the preheated oven, until bottoms and edges of cookies are light brown. Remove from baking sheet and cool on wire racks. Store in an airtight container.
Royal Icing using merang powder
INGREDIENTS (Nutrition)
3 tablespoons meringue powder
4 cups sifted confectioners’ sugar
6 tablespoons water
Beat all ingredients at low speed for 7 to 10 minutes, or until icing forms peaks. Tip: Keep icing covered with a wet kitchen towel at all times. Icing can dry out quickly.
